High Protein Oatmeal Recipe

My favorite meal is breakfast!  I literally dream of what I am going to eat the night before.  This also helps me refrain from late night snacking. ;)  One of my go to's is this high protein oatmeal.   I usually have about 130 grams of protein every day so any way I can sneak it in helps!

1/3 Cup Slow cooking oats

1/3 Cup Unsweetened vanilla almond milk

2 tsp Cinnamon

1 Tbl Psyllium husk

6 Tbl Egg whites

1/3 Cup Berries

Stevia

Pinch of Salt

Optional

1/3 Cup Kashi cinnamon oat cereal

A serving of prepared PB2

Put oats in a microwave safe bowl.  Add a packet of stevia, a pinch of salt, and the cinnamon.  Stir together.

Fill water until it there is about 1 ½ inches of standing water on top of the oatmeal.

Place in the microwave for 2 minutes.

Take out and stir in the psylllim husk, egg whites and milk.  Stir very well!

Cook for 30 second and the stir.  Do this about 3 or 4 times until the oatmeal has a good consistency.

Add frozen berries to cool down the oatmeal. Viola!!!

To spice it up you can add a serving of PB2 (powdered peanut butter) and 1/3 cup of Kashi cinnamon oats to give it a crunch!
